Today’s Free Items – Tuesday 10/23

A quick trip to Fry’s to use my $5 OYNO Catalinas from last week.

Spicy Thai Beef & Rice

 

Spicy Thai Beef & Rice

Ingredients
  • ¾ lb. lean ground beef
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • ½ t. crushed red pepper
  • 2 carrots, thinly sliced
  • ¾ c. Jasmine rice
  • 2 T. soy sauce
  • ⅓ c. chopped fresh mint leaves
  • ⅓ c. chopped fresh cilantro
Instructions
  1. Heat large frying pant over high heat. Add beef; stir-fry 3 to 4 minutes or until browned.
  2. Add onion, garlic and crushed red pepper; stir-fry 1 minute longer.
  3. Mix in carrots, rice 1-1/2 cups water and soy sauce.
  4. Bring to a boil.
  5. Reduce heat to low. Cover and simmer 20 minutes, or until liquid is absorbed.
  6. Mix in mint and cilantro.
  7. Remove from heat. Let stand 10 minutes before serving.
Notes
Ground chicken can be substitued for the beef.

New Life for Expired Coupons

A while ago I learned of Expired Coupons for Overseas Military.  Military families can use manufacturer coupons at the commissaries for up to 6 months past their expiration date.  I contacted ECOM and adopted a family.

Now, each month I gather up my expired coupons, and any coupons that I don’t want from the inserts, package them up and mail them off to a family in Germany.  The picture above is just half of what I mailed out this month.  I mailed out approximately 1685 food and non-food coupons, with a potential savings of $2,739.  It feels good to help others.
